Caramel Cheesecake Stuffed Apples

These apples are filled with creamy rich caramel cheesecake and baked until tender and juicy. It’s equally exquisite as a family-friendly or company-worthy dessert served warm, chilled or at room temperature.

6 Good 4 U Fresh Fruit Royal Gala Apples
8 oz cream cheese, softened
3/4 cup prepared caramel sauce, divided
3 tbsp granulated sugar
1 tsp vanilla
1/2 tsp ground ginger
1 egg, beaten
1/2 cup chopped toasted walnuts

Preheat oven to 325°F. Slice the top off each apple; cut out core and scoop out flesh, leaving 1/2-inch border. Stand apples in 11 x 8 inch baking dish.
In large bowl, beat cream cheese, 1/4 cup of caramel sauce, sugar, vanilla and ginger until smooth. Add egg; beat just until blended. Pour batter evenly into each cored apple.
Bake for 33 to 35 minutes or until almost set but center still jiggles when dish is shaken. Let cool on rack for at least 30 minutes.Warm remaining caramel sauce and drizzle over top of apples; sprinkle with walnuts.


Tip: Walnuts can be replaced with pecans, and tops can also be sprinkled with graham cracker crumbs or crumbled ginger cookies if desired.
